I’m back from vacation in Greece and I find myself reflecting on the places I visited and the foods I ate. Today’s recipe comes from inspiration from….a beach bar!

Earlier this month, I spent the day at a beach in Halkidiki that was from home. This meant staying there for most of the day. Sun lounges, umbrella, snacks, drinks on order.

My friend and I enjoyed this Mushroom pizza that included truffle cream in the description. This is achieved by mixing heavy cream with Tartufata sauce that one can purchase.

Assembly of the pizza follows with a mix of grated mozzarella and parmesan cheeses, sliced mushrooms and torn pieces of prosciutto when it comes out the oven.

The flavours of this pizza surpasses the simplicity of the dish.

Ingredients

  • Half of my pizza dough recipe

  • 1/2 cup heavy cream

  • 1 clove garlic, minced

  • 1/2 cup Tartufata sauce

  • salt and pepper to taste

  • 1 cup grated Mozzarella cheese

  • 1/2 cup grated Parmesan cheese

  • 1 1/2 cups sliced mushrooms (button, cremini)

  • 6 slices of Prosciutto

Directions

  • Make your pizza dough recipe ahead of time.
  • Pre-heat your oven to 500F with rack set to middle of oven (place your pizza stone in oven if using).
  • In a bowl, add your cream, garlic, tartufeta sauce, mix until combined. Add salt and pepper to taste, mix in.
  • Roll (or stretch your pizza dough and place on a cornmeal dusted pizza peel or pizza pan and evenly spread the tartufata sauce on the pizza dough. Sprinkle the grated cheese over the dough then spread your mushrooms over top.
  • Slide the pizza onto the pre-heated pizza stone and bake for 10-12 minutes or until the edges of your pizza are just brown. 
  • Take the pizza out of the oven and place on a cutting board. Hand tear your prosciutto and place on top. Wait 5 minutes before slicing/serving.
