How much time do you spend on-line? I admit I am surfing the ‘net a lot and much of the content is food, dining, travel. The rest of the content is made up of TV shows, movies, documentaries.

A term that’s used often is “viral”. When content on the web gets lots of views by being shared by many – it means it’s gone viral. I recently saw a Barefoot Contessa recipe go viral – her Brownie Pudding. To the eye, it looks like a tray of brownies but once you put your spoon into it, you see a soft, glistening chocolate inside that looks like a lava cake.

I was skeptical when I first saw this dessert but I was seeing it over and over so I committed to trying it out. WOW….this dessert is easy, tasty and the most importantly – the firm top vs/ moist center is texture-wise a delight.

You can place this in the oven while you’re eating lunch or dinner and take it out and serve while it’s still warm. Serve with a scoop of vanilla ice cream and you have a dreamy dessert.

Brownie Pudding

Ingredients

  • 2 sticks of unsalted butter

  • 4 extra large eggs, room temp.

  • 2 cups of white sugar

  • 1 tbsp. vanilla extract

  • 1 Tbsp. of liqueur (framboise, cherry or coffee)

  • 3/4 cup cocoa powder

  • 1/2 cup all purpose flour

  • French vanilla ice cream to serve with

Directions

  • Preheat your oven to 325F. Lightly grease a 9″x12″x2″ baking dish with butter. Place your butter in a bowl and zap in the microwave at 20 second intervals until melted. Set aside.
  • Into a medium bowl, sift the flour and cocoa together and set aside. In a large bowl, add eggs, sugar, vanilla and use a hand mixer on medium speed to cream for 5-7 minutes.
  • Turn the hand mixer to a low speed and add the vanilla, liqueur and sifted flour/cocoa and mix until just combined (no white streaks). Now slowly pour int melted butter and mix until just combined.
  • Pour the mixture into your greased pan and place inside a slightly larger pan. Pour enough hot water to come up halfway up the side of the pan (creating a bain marie).
  • Place on the middle rack of your pre-heated oven and bake for 55-60 minutes. Take out of the oven and allow to cool 20 minutes before serving. Serve with ice cream.
