Gnocchi with Creamy Feta Sauce

I hold/host my Greek Supper Clubs once a month and the latest one took place this past Sunday. One of the dishes I served was a gnocchi with a creamy Feta sauce.

Gnocchi are little dumplings containing potato, flour and eggs and considered party of the huge list of Italian pastas. I have some recipes to make your own gnocchi but there are also some great store-bought products you can buy and keep in your pantry (shelf stable).

I am a fan of covenience products and gnocchi are one those products – great for a quick meal. The sauce here is also quick: mashed up or puree the sauce and add to the cooked gnocchi (or other pasta) and serve.

You can serve ‘as is’ or as I have here some green peas, crumbled Feta and bacon bits.

Gnocchi with Creamy Feta Sauce

Ingredients

  • 1 lb. store bought gnocchi

  • cooking spray

  • Creamy Feta Sauce
  • 1/2 cup crumbled Feta

  • 1/2 cup full fat yogurt

  • 1/ clove of garlic, minced

  • 2/3 to 1 cup hot pasta liquid

  • 1/4 cup grated Parmesan cheese

  • Garnishes
  • 1/3 cup green peas

  • more crumbled Feta

  • Bacon bits

Directions

  • Place a pot of water on your stovetop and bring up to a boil. Add some salt and the gnocchi. Stir and once boiling, simmer for 2 minutes. Reserve pasta water and drain the gnocchi. Return gnocchi to the pot.
  • Add the Feta, yogurt and garlic into a medium bowl and mash together with a fork and add to gnocchi and stir while pouring in pasta water in increments.
  • Add peas and Parmesan and stir in. Divide and plate and top with crumbled Feta and some bacon.

Notes

  • Sheet Pan Gnocchi: Preheat your oven to 375F. Place a piece of parchment on a sheet pan and place your gnocchi on it. Apply cooking spray on gnocchi and toss to evenly coat. Place in preheated oven for 20 minutes. Transfer to a pot/skillet and toss with sauce.
