Andrew’s Avocado Adventure

Long weekends are usually spent out of the city, tending to a garden, catching up with friends or simply decompressing at home.
I was collecting some herbs from my garden and I noticed my neighbor was entertaining. Diego has been friends of the family and neighbors for years and, on the rare occasion that our paths meet(busy lives), we usually touch upon food.
Today was no different as I noticed Diego setting up the table and I asked him “what’s cookin”? Diego was having a simple BBQ of varied sausages and lots of wine but what struck me was the salad his friend Andrew made. When it comes to new foods, I’m not shy about asking for a taste. I was floored by the velveteen texture of the avocado and the earthy flavour of the cumin.
Try this salad out for your next BBQ, your guests will ask for the recipe, as I did!
1 pint cherry or grape tomatoes, halved
2 ripe avocados, peeled and diced
3 cobs of grilled peaches & cream corn
1/2 small red onion, fine dice
1 can black beans, drained & rinsed
1 1/2 lime juice
1 tsp dried oregano
pinch of cumin
Combine all of the above ingredients in a serving bowl and allow the flavours to marry for at least an hour. Serve cool to room temperature.
