BBQ Scalloped Potatoes
Jun 4th, 2007 | By Peter Minakis | Category: BBQ, VegetablesI was introduced to this recipe by my Aunt Vicky and I fell fell in love with it’s taste and simplicity.
You’ll need 4 medium to large Yukon Gold Potatoes;
1 medium onion, sliced;
Montreal Steak Seasoning;
Salted Butter;
Large Aluminum Foil
1) Rinse your potatoes and using a mandolin, slice the potatoes into 1/8 inch slices. If you don’t have a mandoline, slice them with your knife to the approx. width.
2) Toss them in a large boil with about 3 Tbsp. of Montreal Steak Seasoning and the sliced onions.
3) Place about 4 dabs of butter on the double folded foil and deposit the potato mixture and then place another 4 dabs of butter on top of the potatoes.
4)Seal the potatoes by making a packet and sealing the potatoes as tightly as possible.
5)Using your BBQ and indirect heat, please the packet on the side that’s not lit and close the BBQ lid. Your BBQ’s temperature should read about 350F and your potatoes should be ready in 45 minutes.
